The story

A print shop, closed by 6PM.
A ramen counter, open by 7.

Yonaka took over a defunct print shop in an alley most delivery apps still get wrong. The old signage is still bolted above the door — we just never took it down. Twelve stools, one pass-through window to the kitchen, and a chef who has never once explained the menu to a customer, because the menu explains itself.

There's no walk-in freezer. Whatever doesn't sell by close gets eaten by the staff or it doesn't get made again. That's the whole quality system. No loyalty app, no delivery, no printed reviews on the wall — just the line outside, which starts around 11PM and doesn't care what you've heard about the wait.

Shio, shoyu, or miso — spooned into the bottom of a warmed bowl first, so it meets the broth before anything else does.

12-hour tonkotsu

Pork bone and chicken carcass, reduced low and slow since 6AM until it turns cloudy-white and clings to the spoon.
